CHICKEN CURRY PUFF

Today is 7 Ramadan already..
Let us share this Curry Puff / Karipap for today's iftar.
Curry Puff or Karipap in Bahasa Malaysia is a common snack or Kuih found in Malaysia. Be it Malay, Chinese, Indian or dan lain-lain... Karipap is an every time snack.
You can opt to substitute d fillings with potato or  sweet potato. The curried potato is best match with chicken or beef.
CHICKEN CURRY PUFF
Filling:
5 tablespoons oil
1 medium red onion (finely chopped)
1/2 teaspoon kurma powder or chicken curry powder
2 teaspoons meat or chicken curry powder
1 teaspoon chili powder
1/2 teaspoon turmeric powder
1/2 cup of finely diced chicken breast meat
2 large potatoes (boiled and finely diced)
1 1/2 teaspoon sugar
1/2 teaspoon black pepper
1/2 teaspoon salt
Method:
1. Make the filling first. 
2. Heat oil and fry onion gently until golden brown. 
3. Add the kurma powder, curry powder, chili, turmeric and fry gently. 
4. Add the chicken, potatoes, sugar, pepper, salt and cook for 5 minutes. 
5. Mix well and leave aside to cool.

Pastry:
1 lb plain flour
5 oz cooking oil - heat
3/4 cup water
1/2 teaspoon of salt
Method
1. Heat cooking oil.
2. To make pastry, mix flour with oil, water, salt, and knead well. 
3. Let it rest for 1/2 hour. 
4. Cut the dough into circles (3 in) in diameter. 
5. Fold pastry over to make a half circle and crimp at edges. 
6. Deep fry in hot oil until golden.

d SWEETIE CARAMEL RAINBOW CAKE

Today is 1 Ramdhan. 1st day of fasting.
I believe that housewives are cracking their head thinking of what to serve for breaking fast this evening..
Can I recommend Caramel Rainbow Cake as a dessert...???
This Caramel Rainbow Cake is very popular among bloggers who bake. 
Antara my N3 yang telah sekian lama tertunggak..
Caramel Rainbow Cake is a combination of Caramel Pudding & Chiffon Cake.

Some found it very difficult to prepare d cake. 
Some just define it as 'd tedious in baking..'
Anyway, d result is very amazing.. d sweetness of d caramel... d spongy cake.. OMG.. u guys should try..

KEK PUDING KARAMEL

Bahan-bahan : Loyang 22cm/25cm
(A)-Gula Hangus
2 sudu besar gula (utk gula hangus)
*tabur gula dlm loyang n masak atas api perlahan..biar gula hancur dan warna tukar jadi perang)
Ketepikan dulu (gula tersebut akan mengeras & berbunyi macam kaca pecah gitu)

(B) - Bahagian Atas
1 cawan susu cair
1 cawan susu pekat manis
1 sudu teh esen vanila
3 bj kuning telur
2 biji telur (putih & kuning)

(C) - Lapisan Kek
140 gm tepung gandum *Ayak bersama baking powder
70 gm gula kastor
3 bj kuning telur
135 ml air biasa
1 sudu teh baking powder
45 ml minyak masak
2 sudu besar susu pekat manis (Ana tambah)

D) Merinque
6 bj putih telur
70 gm gula kastor
1 sudu teh krim of tartar

Cara -Cara:
  1. Sediakan bahan (A) dahulu, ketepikan.
  2. Kacau semua bhn (B) perlahan2...jgn bg berbuih2...nanti tak jadi pudingnya..
  3. Tapis bahan (B) td dlm loyang gula hangus (A) tadi..ketepikan.
  4. Pukul bahan (C) *Campurkan semua sekali & pukul guna senduk je..ketepikan
  5. Pukul sampai bhn (D) smpai jd kembang & bila kita angkat ia tak jatuh...(meringue)
  6. Campurkan adunan (C) + (D) dan gaul ngan senduk hingga sebati..jangan terlebih kacau, agak-agak bercampur sebati je.
  7. Bahagikan kepada beberapa bahagian & letak pewarna n paste kalau suka..
  8. Masukkan ke dlm loyang yg ada gula hangus & keremel tadi (A + B)..selang seli warna,letak ditengah2 loyang, adunan kek akan terapung.
  9. Bakar cara double boiling/waterbath (Loyang kek berada di dalam loyang berisi air panas) - selama 1 jam 10 minit dengan suhu 175'C, menggunakan api bawah dahulu selama 40 minit, kemudian api atas bawah sehingga masak *Boleh juga menggunakan api atas bawah tetapi guna suhu 160'C / 170'C sahaja, (bergantung kpd oven masing-masing)

TIPS:Jika tak pasti puding dah masak ke belum boleh tambah lagi masa membakar lebih kurang 10 minit,
Bila masak angkat & rehatkan sekurang2nya 25 minit/setengah jam baru terbalikkan kek yg dibakar tadi...masa ni dah agak sejuk jadi senang nak keluarkan kek.
Masukkan dlm peti sejuk 1 jam n lepas tu mkn sejuk2. Lebih sedap selepas semalaman.
Sedap dimakan sejuk. Selamat Mencuba..!!

SURABAYA CHEEZY LAYERED CAKE FOR NURSYAFIQAH AMANINA

ogyep tidak berkesempatan BW ke mana-mana pun.. InshaAllah dikesempatan yang ada nanti, akan diusahakan juga menjenguk kawan-kawan blogger..
Posting birthday my girl ni pun dah kelewatan hampir seminggu..

Finally... 
This is the final birthday cake for the month in d family..
She celebrated her birthday with friends and teachers in school.
Alhamdulillah.. They finished up d cake..

I made Surabaya Cheezy Layered Cake for her. Unfortunately, I didn't manage to capture any photos of the slice cake as they finished up d cake @school. Anyway, my version of Surabaya Layer Cake was d combination of Strawberry & Chocolate layered cake.
Basically, Surabaya Layer Cake has 3 multilayers color (yellow, chocolate, yellow). D original Surabaya Layer Cake uses a lot of egg yolks.  To combine d layers, I used cream cheese mix with strawberry puree.

SURABAYA LAYER CAKE
NOTE : I made 2 mixes i.e. Strawberry & Chocolate
This recipe is for 1 mix.
Bahan-bahan:
150g super fine flour /tepung halus
140g castor sugar /gula kastor
5 eggs / telor - grade A
1tbs ovallete
80ml fresh milk /susu segar
80ml canola oil / minyak canola
1 tsp vanilla essence / essen vanilla
1 tsp baking powder / serbuk penaik
1 tbs cocoa powder / serbuk koko - for chocolate layer
tsp strawberry emulco + 1 tsp pink colouring - for strawberry layer
Method / Cara :
1. Prepare a 10"x10" baking tray. Preheat oven at 160C.
Sediakan loyang 10"x10" yang dialas dengan kertas serap minyak. Panaskan oven 160C.
2. Sift flour + baking powder. Set aside.
Ayak bersama tepung + serbuk penaik. Ketepikan.
3. Combine d sifted ingredients + castor + ovalette on mixing bowl. Put on high speed for 5 minutes or until d mixture becomes double fluffy.
Satukan gula, ovalette dan bahan yang diayak tadi dalam mangkuk adunan. Pukul selama 5 minit dengan kelajuan tinggi sehingga adunan menjadi kembang (2x ganda)
4. Slow down d mixer, add in fresh milk. Continue on high speed again for another 3 minutes.
Perlahankan kelajuan dan masukkan susu segar, pukul lagi dengan kelajuan tinggi selama 3 minit atau sehingga aduan kek menjadi kembang dan ringan.
5. Pour in d canola oil + cocoa powder OR Strawberry Emulco & pink colour.  Fold & flip with spatula. Do not over mix.
Tuangkan minyak canola kedalam adunan dan kaup balik dengan spatula sehingga sebati.
7. Bake for 30-35 minutes (depends on oven)
Bakar selama 25-30 minit atau bergantung pada oven masing-masing.
8. Once d cake is cooked, leave d cake to completely cool.
Bila dah masak keluarkan dari oven. Biarkan kek benar2 sejuk sebelum dipotong untuk proses melapis.

Layer Spread
Ingredients :
250g cream cheese
2tbs Strawberry puree / jam
Method :
1. In a large bowl, beat d cream cheese with an electric mixer. With the mixer on low speed, add the strawberry puree/jam until smooth and creamy.

Quite tight up with orders these few weeks..
I do not want to put so much chocolate in d recipe.. Very light chocolate for a little different of chocolate cake.
D cake turned out to be so fluffy & moist..
I would recommend u guys to try out d recipe.
