KUEH CARA MANIS

KuEh CaRa MaNiS is a Malay inspired dumpling TaKoYaKi (d Japanese style dumpling) cooked on a hot plate.
It is a Malay delicacy that uses a flour mixture and is cooked in a patterned iron or brass mould. 
This kuih comes in 2 varieties, you can make it plain sweet, just by dropping some sugar in the center or savoury, by adding a mixture of spiced minced meat mixture.
Here is an authentic recipe of d :
KuEh CaRa MaNiS. 
Ingredients:
4 cups plain flour
2 boxes Coconut Milk (ogyep likes to use d MS brand)
3 eggs
2 cups water (blend together with d pandanus leaves)
5-6 pandanus leaves
1-2 drops green coconut pandan paste
a drop of green color (if u like)
dash of salt (to toast up d milky taste)
Castor sugar to be dropped in the centre (about 1/4 tsp for each kuih)
Method:
1.Clean & wash d pandanus leaves. Blend together with 2 cups of water. Strain d mixture & set aside.
2. Bring together d flour, coconut milk, eggs, coconut pandan paste & salt in a mixing bowl. Mix well till u  get a thick batter. 
3. Add in the pandanus water. Just add in bit by bit till u got a flowing batter. Not too dilute please..
4. Strain d batter.
5. Meanwhile heat up the mould on the stove. Slather it with some cooking oil to prevent sticking.
6. Place a ladle-ful of the mixture to 3/4 fill each mould.
7. Sprinkle about 1/4 tsp of sugar in the center of each mixture.
8. over and cook about 5 mins or the kueh is done when the top is dry.
9. ogyep uses 'cake tester' to pull out the Kueh from d mould.
BAHAN-BAHAN:
4 cawan tepung gandum 
2 kotak santan kelapa (ogyep suka guna M&S)
3 biji telur
 2 cawan air - untuk dikisar bersama daun pandan
5-6 helai daun pandan
1-2 drops green coconut pandan paste (ogyep suka bau lemak pandannya)
Castor sugar - untuk diletakkan ditengah2 Kueh
Garam secukup rasa - untuk menaikkan rasa lemak adunan
Minyak masak secukupnya - untuk mengoles acuan
CARA MEMBUATNYA :-) 
1. Daun pandan dicuci dan kisar bersama air kemudian ditapis. 
2. Satukan tepung gandum, santan, telur & coconut pandan paste. Kacau rata dengan whisk hingga semua sebati, tambah garam secukup rasa. 
3. Ketika ini adunan kita akan kelihatan sedikit pekat. Masukkan air perahan daun pandan tadi secara sedikit2, bagi memastikan adunan kita nanti tidak terlalu cair. Adunan sepatutnya sedikit cair seperti adunan kuih kaswi camtu..
4. Kacau dan tapis adunan tadi. Untuk memastikan aduna  tidak berketul2. 
5. Panaskan acuan kuih cara (acuan kuih baulu) atas dapur gas, gunakan api perlahan. Lenser sedikit minyak masak pada lubang2 acu.
6. Apabila acuan sudah panas, bolehlah mula menuang adunan tadi ke dalam lubang2 acu sehingga 3/4 penuh. 
7. Sudukan 1/4 sudu gula pasir pada setiap kuih. (Anggaran hujung sudu sahaja.)
Tutup permukaannya acuan dengan tudung periuk. 
8. Kueh Cara kita sudah masak sekiranya, ia tidak lagi melekat apabila disentuh.
9. ogyep gunakan 'cake tester' untuk mengeluarkan kueh dari acunya apabila sudah masak.

IT HAS BEEN A WHILE.. TIME TO CATCH UP..

Lama betul tak 'go-blog'.. berhabuk sana-sini..
OMG.. 
It almost feels like cleaning off the dust a bit here & a bit there on this ogyep yummy mellow kitchen. 
My last post was in Feb 2013 and some of you might think that I was  forced into hibernation by a harsh haze recently.
hahaha..
Happy Eid Mubarak.. Selamat Hari Raya Aidilfitri
It is already  13 days into Eidulfitri i.e. 13 Syawal..
Hopefully, it is still not too late to wish all my Muslim friends and visitors Eid Mubarak or Selamat Hari Raya! 
I hope that all of you who are celebrating Eid have had a great and heart-warming celebration wherever you are.
InshaAllah.. Aminnnn..
It really has been a while since my last blogpost. I've been rather busy with my baking project or my other cores..
This will probably take me a while to get back to blogging on a regular basis, so for now I will keep it simple.
Frequent readers of my blog would have noticed that I am not very active these days, especially for the past 4-5 months..
A lot happened in the meantime. 
Just to point a few (in no special order):
1. Lost my father on 29 Nov 2012
2. Lost my father in law on 28 May 2013.
3. Lost  my grandmother on 4 July 2013
4.Bzzzz with my 2013 hari raya cookies project.
5. Two of my girls will be facing UPSR & PMR this year .. Bzzzz monitoring their schedule.
Thus, have made me to realize that nothing is permanent in this world and how powerless we are in controlling the things which happen around us.  
One thing after another.. 
ALLAH is great..
Well, what is past is already past... and it’s time for me to realize that life has to go on.  
And I guess I am recovering and will be in a position to overcome it.
What ever happens, life has to go on…

So, as for now..
Happy Eid Mubarak and Selamat Hari Raya Aidilfitri once again, from ogyep yummy mellow. 
And should I  have accidentally hurt anyone’s feeling with my words on this blog.. I am sincerely apologize.
Looking forward for your heartiest continuous support..

KUIH KASTURI

Ok, I have been a bit slack with updating, but this honour is officially the motivation I need to update my blog more often.
Has it really been over 2 weeks since my last post? 
WOW..!! Just WOW..!!
Malas ke ogyep ni..
Well, to be fair, I have been really busy with various responsibilities.
BUT,  
deep inside me, I always wanted to share my latest recipe and dishes. 
There are so many things I wanna share here however, when time, energy and work are taken into further consideration, I become demotivated. 
POOR ogyep... sobsobsob..
Well, let us go back to this very delicious fritters..
This fritters is called KUIH RENGAS or KUIH KASTURI or GREEN BEAN FRITTERS
The fritters are rich in protein from the green beans.
 Granulated sugar may be replaced with palm sugar (gula Melaka) for a not so sweet kuih.
 This traditional Malay kuih has a crispy outer layer and soft tasty filling, making it such a wonderful combination.

KUIH RENGAS
Ingredients:
300g Green (mung) beans
150g Granulated sugar
150g Grated coconut
40g All-purpose flour
1/2 tsp Salt
Batter:
120g Rice flour
60g All-purpose flour
1tbs butter
A pinch of Ground turmeric
Salt 1/2 tsp
Water 110–120 ml
-Cooking oil for deep-frying-
Method :
1. Boil green beans until tender, adding more water when necessary.
2. When all green beans are broken up and most of the liquid has been absorbed or evaporated, add granulated sugar, grated coconut, plain flour and salt.
3. Stir until mixture is very mushy. Remove from heat and leave to cool.
4. Take a portion the size of a small egg and shape it into a ball. Flatten ball slightly to make 1-cm thick patties. Repeat process until mixture is used up.
5. Prepare batter. Combine rice flour, plain flour, egg, ground turmeric, salt and water. Add just enough water to obtain a smooth consistency.
6. Heat cooking oil in a pan. Coat green bean patties in batter. Fry coated patties in hot oil until crispy. Remove and drain well on absorbent paper before serving.
