NAK MAKAN UBI KAYU KE.. NAK MAKAN NASI MINYAK

What will be your answer if you were asked such question? 
TAPIOCA/CASSAVA or SAVOURY RICE..??
Apakah jawapan anda apabila ditanya.. 
UBI KAYU atau NASI MINYAK..??

Mengapakah perbandingan sebegitu boleh diketengahkan?  
Adakah UBI KAYU melambangkan suatu kehidupan yang menyeksakan?
Ataupun NASI MINYAK itu melambangkan kehidupan yang mewah?

Once upon a time, di zaman penjajahan Jepun.. mungkin nenek moyang kita serik dengan segala yang berkaitan dengan UBI KAYU..
Sarapan apa? Ubi kayu rebus…
Makan tengahari apa? Rebus pucuk ubi aje.. 
Makan malam apa? Hai ntah lah…  Ubi dan ubi dan ubi lagi…

Antik kah yang bernama UBI KAYU itu..?
Kalau antik, harganya tentu antik juga..
Kalau antik, pasti menjadi rebutan..
 Kalau antik, pasti berharga..
Kalau antik, pasti ada sejarahnya..

Hari ini, kami makan tengahari , Masak Lomak Cili Api Pucuk Ubi dengan Tempeh.

Minum petang.. Ubi Kayu Goreng

Makan malamnya… apa lagi, ulang tayang la Masak Lomak Cili Api Pucuk Ubi dengan Tempeh.

Darurat ke..?? Tak cukup ke bekalan makanan..??  Hinggakan ubi kayu menjadi hidangan..
  
MUNGKIN TIDAKKKK

Dewasa ini, ubi kayu bukanlah lagi mencerminkan derita dan tangis.. UBI KAYU yang putih melepak, telah diwarnai dengan pelbagai warna dan rasa,  menjadi pelbagai rupa kerepek ubi kayu.. tapai ubi kayu…  bingka ubi kayu.. lepat ubi kayu.. pengat ubi kayu.. ubi kayu rebus.. talam ubi kayu… macam2 lagi. 

Blog-walking lah.. blogger2 masakan pasti mempunyai pelbagai resepi yang berkaitan dengan ubi kayu..

Malah sesetengah negara menjadikan UBI KAYU sebagai sumber pendapatan. Ubi kayu ditanam secara komersial untuk menghasilkan tepung ubi. Tepung ubi kayu juga digunakan dalam industri makanan setelah ia diproses menjadi monosodium glutamat (MSG) terutama di negara Timur Jauh dan Amerika Latin.Tahukah anda, untuk menghasilkan satu tan MSG, ia memerlukan lebih kurang 2.4 tan tepung ubi kayu atau tepung kanji.
`
Nyatalah.. UBI KAYU mempunyai nilai komersil yang tersendiri.
Maka, kalau dahulu ubi kayu akan mengingatkan kita kepada zaman penjajahan Jepun.. 
Kini, masih adakah lagi yang merasakan mereka teraniaya seperti di zaman Jepun apabila menjadikan UBI KAYU sebagai juadah..

Kalaulah ADA.. KEJAM sungguh..

ATAU.. adakah tuan yang mengajukan soalan itu melambangkan ubi kayu sebagai satu-satunya makanan pilihan sekiranya berlaku masalah mendapatkan sumber makanan lain, ATAU seperti ketika musim tengkujuh atau malapetaka awam, ATAU semasa darurat ATAU semasa peperangan..

Semoga kita tidak ditakutkan dengan fenomena memakan ubi kayu ya..

 I guna ikan bilis dan tempeh… Tempeh lagi…
Tak pe, kan ANTIK..
Bukan ke mak kata "makan tempeh, nanti jadi pandai"

Jom kita layan resepi..

UBI KAYU GORENG

1 kg ubi kayu
10 -15 ulas bawang putih (lagi banyak, lagi sedap)
¼ sk garam
Secubit kunyit

Cara :
  1. Potong ubi kayu memanjang
  2. Tumbuk kasar bawang putih.
  3. Satukan ubi kayu + bawng putih + garam + serbuk kunyit. Gaul rata.
  4. Goreng api sederhana, sehingga nampak garing.




MASAK LOMAK CILI API PUCUK UBI

Bahan :
Secekak pucuk ubi – pipih daun pucuknya 3-4 helai yang paling atas
8 biji cili api
Santan dari 1 biji kelapa
10-15 ekor ikan bilis – direndam , dibasuh dan ditoskan
Tempeh – 1 keping dipotong 10
Garam & gula secukup rasa

Cara :
  1. Rebus pucuk ubi. Tos dan perahkan air dari pucuk ubi yang direbus.
  2. Perahkan santan kelapa. Asingkan santan pekat dan santan cair.
  3. Masukkan dahulu santan cair ke dalam periuk.
  4. Tumbuk cili api. Masukkan ke dalam periuk santan cair.
  5. Tumbuk separuh dari kan bilis. Masukkan ikan bilis tumbuk dan ikan bilis belah kedalam periuk santan cair.
  6. Masak santan cair hingga naik wap. Masukkan pucuk ubi.
  7. Masukkan tempeh yang telah dipotong.
  8. Apabila sudah menggelegak, masukkan pula santan pekat. Masak sehingga menggelegak semula.

SAMBAL GORENG BERLADA ANTIK DALAM BAKUL ANTIK


Kenapa SAMBAL GORENG BERLADA ANTIK? 

Bukanlah sambal tempeh ni dah antik usianya.. Baru je siap dimasak..
Cumanya.. tempeh, kacang tanah & ikan bilis ni macam dah sinonim dengan orang Melayu or shall I say orang Malaysia.

In other words,  Sejak dahulu lagi..

Kalau dulu orang kata, orang Jawa aje yang makan tempeh.. Tapi, sekarang ni orang Jepun pun makan tempeh.. Worlwide gitu.. 
Namanya je glamour sikit.. Fermented Soybeans

A little bit introduction of Tempeh or Fermented Soybeans. Tempeh is originally from Indonesia. It is made from cooked and slightly fermented soybeans. It looks like is a patty formed veggie burger. It has a textured and nutty flavour. Tempeh is  very high in protein and calcium.

Kata emak, makan tempe banyak2... nanti jadi pandai & kulit pun cantik. 
As for me, it is very subjective.. Betul tak? Secara saintifiknya, tidak dinafikan... kacang soya memanglah kaya dengan protin dan kalsium.. HEALTHY FOOD..

This chocolate cake was ordered by a friend. It was to be given out on her get-together family gathering, last weekend.



It has been a norm in my family.. 
Should I have an order to fulfill, I have to prepare one same cake for people at home also..
This is home version punya...

ogyep's POP - TOFU


Assalammualaikum wth.. and good day everybody..

May we start this Monday with good spirit through-out the week, InshaAllah..
This week is going to b a bz week I guess.. Kids will be facing their 1st Test @ school prior d school break on 10th March 2012.

Today's recipe is Pop Tofu.. 
Very simple recipe yet very healthy and delicious.. 


We  are going to use this type of tofu.. I call it Tofu Pelampung or Floating Tofu.. Normally, we add d tofu in   curry when we make Curry Mee.
The tofu will float in your curry.. Terapung-apung macam pelampung kan..


POP TOFU

Ingredients :
20 pcs Floating Tofu

Filling 
2 pcs white tofu
70 -100g minced chicken/ meat/prawn
1/4 tsp ground black pepper
1/4 tsp salt
Grated carrot    
Spring onion

Method :
1. Cross cut the Floating Tofu. Slowly turn the inside part of the tofu outside. (as shown below)
    Set aside.



Filling :
2. Grate carrot.
3. Slice the spring onion
4. Mashed the white tofu.
5. Mix in all ingredients. 
6. Stuff in the filling into the float tofu (as shown below)

                            

7. Your float tofu will look like these.. They are now called Pop-Tofu. You can either deep fry the Pop Tofu or steam them, as per your preference. Do not worry, the filling won't come out when you deep fried them.. I fried them.

You can eat the Pop Tofu with chilli sauce or Thai chilli. As for me, I made the sauce my self.

BANANA FRITTERS aka PISANG GORENG

It is raining heavily. People at home are freezing hungry..
 Let us enjoy this simple banana fritters aka Pisang Goreng.

We love Pisang Abu.. Personally, I love Pisang Nangka more..

Nowadays, with RM1 you can only have 4 pieces of d fritters.. Normally the Pisang Goreng sellers will slice 1 banana into two slices.. 
Nothing is cheap man.. 
Buy the fresh banana... DIY @ home.. Enjoy them with your family..


HOW??
Very d easy..
 Let us view my simple recipe of d Banana Fritters aka Pisang Goreng..


TEPUNG GORENG PISANG RANGUP

Bahan-bahan :
100g tepung beras
50g tepung gandum
1sk kapur makan
1/2 sk garam
1/2 cawan air
2 sb minyak masak panas - dari kuali untuk menggoreng pisang

Cara :-
1. Satukan semua bahan, kecuali minyak panas. Kacau sebati.
2. Apabila adunan tepung sudah sebati. Ambil 2 sb minyak masak yang panas dari kuali untuk menggoreng dan campurkan ke dalam adunan tepung tadi.
3. Kacau rata.
4. Masukkan pisang yang telah di belah ke dalam tepung apabila sedia untuk menggoreng sahaja. Jangan biarkan pisang terendam lama di dalam tepung.



Sedap di cicah dengan sambal kicap atau sambal tumis.

ogyep's HERITAGE NASI LEMAK

Selamat bersiaran di hujung minggu. 
May you enjoy your weekends after hard days throughout d weeks..

Nasi Lemak is a common breakfast for Malaysian.. Some could have it every days.. But some would have it alternately and maybe, those who are health conscious would think twice to have it as their favourite dish. However, to me.. moderation is always a healthy habbit.

Well, this is my Mom's heritage Nasi Lemak. 
As Nasi Lemak is a common menu, somes may found the recipe quite similar here & there.

A little advise from my mom is.. "A nice sambal tumis should be cooked under a slow heat until it looks shinning and oily".. By the time you're done with d sambal tumis, your stove will be very messy with all the splashing sambal & oil..

"Nasi Lemak anyone..??."



My hubby's always said that my sambal tumis tastes like no others sambal tumis. 
Even though, I m totally copying my mother's recipe, my mom's one is still doesn't taste like mine. As for me, my mom's is still d best.
No two are alike.. 
I believe 'air tangan' will make the difference..


Even, my daughter always ask me.. Kenapa nasi Nasi Lemak Mama tak sama dengan nasi Makcik2nya yang lain.. Baunya. Teksturnya.. Rasanya.. 

I m not trying to give credit to my Nasi Lemak.. To me, apa yang orang masak, selalu sedap.. may be b'cos dah jemu makan masakan sendiri.

What I m trying to stress is..
Air tangan seseorang akan memberikan effect yang kuat kepada rasa sesuatu masakan. We could copy d recipe 100%, but d result will b a little bit different.
May be you guys out there could comment a bit on this..

NASI LEMAK.

Bahan-bahan :
5 cawan beras
Santan dari 1 1/2  biji kelapa.
- Untuk 5 cawan beras, roughly akan menggunakan 6 - 7 cawan santan. Walaubagaimanapun, akan bergantung kepada jenis beras juga. Ada beras yang menggunakan kurang air. Sila ikut kebiasaan anda.
1 sk garam
2 helai daun pandan - dikoyak/dibelah dua dan disimpulkan

Cara :-
1. Basuh beras dan ketepikan.
2. Blend kan kelapa parut dengan air. Kemudian perah kelapa tadi (make 2 rounds) hingga mendapatkan 7 cawan santan.
3. Tapiskan santan. Jangan diambil bahagian santan yang paling bawah kerana ia sedikit coklat.
4. Panaskan santan hingga berwap. Jangan sampai mendidih.
5. Satukan beras dan santan di dalam periuk nasi elektrik.
6. Letakkan garam.
7. Apabila nasi hampir kering, kacau rata nasi kerana kepala santan akan berada di atas. Kemudian, baru masukkan simpulan daun pandan.
8. Tutup periuk nasi, dan tuggu hingga nasi masak automatically.


SAMBAL TUMIS IKAN BILIS.

Bahan-bahan:
2 genggam cili kering.
1 genggam ikan bilis.
1 biji bawang besar - dihiris bulat kasar
8 ulas bawang merah
1 ulas bawang putih
1 sb udang kering
1 cm belacan
1 sb asam jawa + 1 cawan air - ditapis
Garam & gula secukup rasa
1 keping asam keping.

Cara :-
1. Goreng garing ikan bilis. Api perlahan. (basuh ikan bilis apabila minyak sedia panas untuk menggoreng, jangan basuh ikan bilis awal2- nati ikan bilis tak garing). Put aside.
2. Kisar halus cili kering + bwg mrh + bwg pth + udang kering + belacan dengan menggunakan air asam jawa.
3. Dengan menggunakan minyak gorengan ikan bilis tadi, tumis bahan2 yang dikisar tadi.
4. Masukkan 1 keping asam keping.
5. Tumis dengan api perlahan hingga naik minyak dan cili betul2 matang.
6. Sesuaikan rasa dengan garam & gula.
7. Masukkan bawang hiris dan ikan bilis goreng tadi.
8. Keluarkan asam keping.

ogyep's FRIED CHICKEN

Western Menu is my kids' favourite. 

These  menus are their favourite. Fried chicken, mashed potato & coleslow a.k.a. KFC menu.

Normally, I will prepare simple dinner for my family on Tuesday, Wednesday & Friday. 

WHY??

B'coz.. on those days, my 2 eldest girls will go for tuition class which starts @ 8pm. 
On those days, they r always rushing for dinner. . 

Back from school at 7pm..
straight upstairs for shower & prayer.. 
down again for dinner.. 
by 7.45pm got to be out for the class.. 
quite tight allowance for a heavy dinner..


This is my ogyep's Fried Chicken.. 




They really love these. They will ask for these again, as soon as they get back from tuition class.. Supper Meal..


ogyep's Fried Chicken

Ingredients :
Any parts of chicken (8 pcs)
2 egg yolk
1/2 cup  corn flour
2 tbs wheat flour
2 tbs chicken curry powder (optional - for spicy fried chicken)
1tsp salt

Method.
1. Clean and dry d chicken. If d chicken is still wet, wipe a bit bit tissue.
2. Beat egg yolks. Put aside.
3. Mix together all the dry ingredients.
4. With one hand, dip the chicken into d egg yolk. Make sure the yolk covers every part of the chicken. 
    Drop d chicken in the flour mixtures.
5. With d other hand, roll d chicken with the flour mixtures.
6. Deep fry d chicken.


Mashed Potato.

Ingredients :
4 white potatos
1 cup milk (i use HLMarigold)
1/4 tsp salt

Method.
1. Peel & boil d potatoes.
2. Mashed or blend (for smooth mixture) d potatoes. Transfer into bowl.
3. Heat d milk on slow heat. (Do not boil)
4. Pour d milk into the mashed potato bowl.
5. Quickly, mix them well. If you feel like having more moist mashed potato, add some more milk.


Brown Sauce Topping

Ingredients:
1 can button mushroom (Ayam Brand)
1 can water (the same can)
1 cube Knorr chicken stock.
2 tbs butter
Note :  you can also add the left over fried flour in the wok from  the fried chicken that you have fried, when you blend the mushroom. (extra taste to the sauce)

Method.
1. Wash the button mushroom.
2. Blend the button mushroom with 1 can of water
3. Boil the blanched button mushroom - slow heat.
4. Add the chicken cube.
5. Sieve the mixture.
6. Add butter and 1 tbs of d mashed potato u made earlier to thicken d sauce. Mix well.


Coleslow

Ingredients:

1/4 Cabbage
1 Carrot
4tbs Mayonnis
1tsp Lemon Juice

1. Grate carrot & cabbage.
2. Mix all ingredients. Keep in fridge at least 30 min. for better taste.






D Japanese Boy

Salam everyones outhere?

Lama tak update blog.. Lama tak 'go-blog'..almost 'goblok' gitu. 


But still blog-walking around..

Not in a mood to update blog. After my last entry, I've misplaced my "Japanese Boy" thumb drive which I keep & save all my recent photos to be uploaded in d blog.. FORTUNATELY, it was found again by my 4 years old son, yesterday.. Alhamdulillah.. Thank God..

It's not end yet.. 
Double disasters.. 
As I was bz with the house-chores, I got my 2nd daughter to help me to download few more photos from camera to d Japanese Boy before I could upload them in my blog later.. and.. UNFORTUNATELY, by accident I guess, she had deleted all my photos in d Japanese Boy... I was really mad and sad.. 


The Japanese Boy have everything inside (the last 3 weeks photos), inclusive recent birthday  photos of my eldest daughter.

So, I guess there should be hikmah (hidden good) of all those incidents.. Try to take things easy.. InshaAllah.. but still God knows how I feel..



So, this is d Japanese Boy.. so cute yet so full..

So, LESSON LEARNT..Allah knows better.

LETS LUNCH

Lunch apa hari ni? Dengan siapa?
OR 
still haven't figure out what to cook or to have for lunch..

These were my yesterday's lunch menu.. Hopefully, can give u guys some idea of what to cook. 
I believe, being a housewife will gives us big headache of what to cook everyday. Me, myself sometimes loosing my mind with this task.

I have to cook at least 2 dishes everyday. 1 spicy food and 1 non-spicy food.. 
Real headache..

PARU GORENG BERLADA aka SPICY FRIED LUNG



AYAM MASAK KICAP SOO-HOON aka GLASS NOODLES SOY SAUCE CHICKEN



BUTTER SUGAR BUN

I made these Butter Sugar Bun just for my kids titbits. Every single person in my family love this Butter Sugar Bun. They like to have it at no particular time.. Neither breakfast nor tea time.. Lunch pun they can have it.. 
In other words..It is an every time titbits.. 

Just make the bun.. they will finish it out.. 

Butter Sugar Bun is a basic bun recipe.



BUTTER SUGAR BUN
Ingredients :


300g high protein flour
50g tepung gandum

2tsp dry yis
120ml warm milk - double boiled for a while.

2 tbs milk powder
2 tsp vanilla essence
1 egg
40g butter
1/2tsp salt
1 tbs bread improver
1 tsp baking powder
3 tbs gula


Method :
1. If u use BM, just follow instructions given according to your BM. Press d START button & wait until its done. Move to step 4.

2. If u r on manual technique, just dump in all ingredients and mixed them until you reach a smooth and clean dough. Move to step 4.

3. I used my kMixer.. dump in all dry ingredients, and ON the mixer on low speed for 10 minutes. Then, add in d wet ingredients, slowly shift the mixer from low speed to higher speed, until it becomes an elastic dough.



4. Leave the dough to rest for 40 - 60 minutes until the size becomes double.


5. Pas tu, tumbuk-tumbukkan doh tadi bagi mengeluarkan angin. Uli lagi for another 5 minutes. Pas tu baru u bulat-bulatkan as per your preference.

5. Gliss permukaan bun dengan butter dan spread dengan sedikit gula. Last but not least, bake for 15 - 20 minutes @ 180 degree.
