Earlier in January 2012, ogyep yummy-mellow had posted an n3 about Panettone.. Those who would like to refresh please direct to HERE
The earlier was d small version of d Panettone, whereby ogyep had improvised d recipe here & there.
This is d original version of d Italian Panettone. It is a classic Italian bread than could be found throughout Italy especially during Christmas. It is a surprisingly light bread even though it it rich with butter and dried fruit.

ITALIAN PANETTONE
(makes 1 Loaf)

Ingredients :
400g unbleached white bread flour (high protein flour)
1/2 tsp salt
15g fresh yeast
120ml lukewarm milk
2 eggs
2 egg yolks
75g castor sugar
150g butter -softened
115g mixed dried fruits
75g raisins
melted butter for brushing
Method :
1. Using a double layer of greaseproof paper, line & butter a 6" deep cake tin. Finish d paper 3" above d top of d tin.
2. Sift d flour and salt into bowl. Cream d yeast with 4 tbs of d milk, then mix in d remainder.
3. Pour d yeast mixture into d centre of d flour. Add d whole eggs and mix in sufficient flour to make a thick batter. Sprinkle a little flour over the top and leave to "sponge" in a warm place for 30 minutes.
4. Add d egg yolks and sugar and mix to a soft dough. Add in d softened butter, then turn out on to a lightly floured surface and knead for 7-10 minutes until elastic.
5. Place in a lightly oiled bowl, cover with lightly oiled clear film and leave to rise, in a slightly warm place, for 1.5 - 2 hours, ur until double in bulk.
6. Knock back d dough and turn out on to a floured surface. Gently knead in mix dried fruits and raisins.
7. Shape into a ball and place in d tin. Cover with oiled clear film and leave to rise again, in a warm place for about another hour or until doubled.
8. Meanwhile, preheat oven to 190 degree. Brush d loaf with melted butter and cut a cross o d top of d bread.
9. Bake for 20 minutes, then reduce d oven temperature to 180 degree. Brush d top with melted butter again and bake for another 25-30 min or more, or until golden.
10. Cool in d tin for 5-10 min, then turn out on to a wire rack to cool.

walaupun ogyep agak kurenggg suka dengan mix fruit, tapi... dengan panettone ni, I can go.....
