KUIH LOPES/GLUTINOUS RICE CAKE

my favourites

Kuih lopes is d best kuih ever! I could easily pop few of these kuih lopes in a second. I go crazy over this.
This is another kuih associate with traditional food - wrapped in banana leaves  a.k.a a surviving traditional food of the Malays..
You may have it for breakfast or tea and they’re simply delectable. Smells sweet, taste even sweeter! Yummy-Mellow.
BUT
Beware...too much of glutinous rice is not good for our body. Still remember, those time, my Mum always make noise when I ate so much of this Kuih Lopes.. "Jangan makan banyak2 pulut tu... nanti ngantuk kat kelas"

So why do people still eat it?
I have no idea. But to me, for ones who love its mild sweetness and its starchy sticky texture, it is something that you can't resist..

What is Kuih Lopes  actually?
Well, basically it’s just glutinous rice cooked with pandanus juice. The steamed glutinous rice will then be rolled into logs using banana leaf. Like this..
logs of kuih lopes after being steamed

Then, the logs are being steamed for 10 minutes and chilled.
Cut and coated with fresh grated coconut.
As the glutinous rice is very sticky, you have to use thread to cut the logs into round slices kuih lopes, like this..

Check-it out d recipe..

KUIH LOPES /GLUTINOUS RICE CAKE

Ingredients:
half KG glutinous rice - washed and soaked for 4 hours or more
6-7 pcs pandanus leaves - blended with 2 cups of water, later sifted
1/2 tsp salt
banana leaf - soaked in boiling hot water for 2 minutes to soften

4- 5 tbsp of shredded coconut (white) + pinch of salt

Syrup Ingredients:
Palm Sugar - amount as required
sugar - depending on how sweet you want d syrup to be
a few tablespoons of water - depending on how dilute or thick you prefer the syrup to be

Method:
1. In a bowl, mix d glutinous rice, salt and pandanus water. Just pour enough pandanus water to the same level of rice.
2. In a heat resistant bowl, line the bowl with cooking oil.
3. Put the steamer on the stove. When the water is boil, place the bowl into the steamer.
4. Steam for about 10 minutes. Stir the rice a little.  Continue steaming for another 10 minutes or until the rice is cooked and there is no more liquid.
5. While the rice is steaming, put the ingredients for the syrup into a small saucepan. Under low heat, melt the sugar.
6. Soaked banana leaves in hot water to soften d leaves. Wipe to dry d leaves.
7. Placed 2-3 scoops (depends on d size of banana leaf) of cooked glutinous rice on the banana leaf. Then, rolled & covered the glutinous rice into logs. Tied  the two ends.
8. Steamed the logs for another 15 minutes.
9. Nice moulded rice cake, is ready to be cut. Use thread to cut the kuih lopes into round slices.
10. Coated with fresh grated coconut.

11. Serves with syrup.
