BACK TO THE ROOTS.. CEKODOK IKAN BILIS AJE..

ANCHOVIES SAVOURY FRITTERS

A very simple and classic breakfast.. I believe that everyone knows how to make this fritters. Mixes of flour, sliced onion, pounded anchovies, water & salt for a very tasty savoury fritters.
Malaysian called it Cekodok (Cucur) or savoury fritter. It is one of the Malaysian favourite snack, could be served for breakfast or tea time.

I like to fry the fritters slightly thin to get a crispy and crunchier fritters as my hubby prefers to have it crunchy. Meanwhile, my father prefers it to be a bit thicker as he wants to feel d flour taste.
So use to have it thinner, I sometimes served the same to my father whenever I go back to my hometown. 
And my father will make a joke of my fritters, "What a world map we have here.. this is Australia.. that is Singapore... " Hehehe..

Those time, this fritters are considered as a low cost meal. If u have plain flour and cooking oil, would be enough to serve this fritters. 
Todays, we could easily find varieties of fritters with different kind of ingredients such as prawn or crabs meat. You may add bean sprouts or onion springs for a better taste and aroma also. Surprisingly, they are no more a low cost meal.. 


Anchovies Fritters / Cekodok (Cucur) Ikan Bilis

Ingredients :
1/2 kg plain flour
1tbs corn flour
450ml water (if u wish to make d thin one, u will need xtra water)
1 big onion, sliced or chopped
100g ikan bilis - anchovies, washed and pounded
1 ½ tsp salt or to taste
Pepper powder (optional)
1/2tsp anchovy stock powder (optional)

Method :
1. Mix all the ingredients for a slightly thick batter.
2. Heat oil in a wok, spoon into hot oil and fry till brown. 
3. Drain on paper kitchen towel. 
4. Best serves with sweet chilli dipping sauce OR you may chopped some bird eyes chillies mix with soy sauce.



Best served while it hots!!
